Bread scoring knife for intricate bread designs.
With the Patisse Dough Scoring Knife, you can easily and precisely score bread dough before it goes into the oven. This type of scoring knife is also known as a lame and is specially designed for making cuts in unbaked bread. Scoring the dough just before baking allows the bread to expand where intended and helps reduce unwanted cracking. The lame has a thin, sharp blade edge with a French design and comes with a safety cover, allowing you to store the scoring knife safely after use.
Use the Patisse scoring knife for sourdough bread, baguettes and other homemade breads. A deeper cut gives the bread room to open up nicely during baking, while shallower cuts are suitable for creating decorative patterns.

Use the Patisse Dough Scoring Knife after the bread dough has completed its final rise and just before placing the bread in the oven. Remove the safety cover and hold the scoring knife firmly. Make one or more cuts in the surface of the dough with a quick, controlled movement.
Make a deeper cut when you want to give the bread room to open up nicely during baking. For decorative patterns, you can make several shallower cuts. The depth and pattern of the cuts depend on the type of bread and the desired result.
Place the bread in the oven immediately after scoring. Clean the scoring knife after use and replace the safety cover before storing it.
